HOT SPOT repost - Tulum

Ok, so not to toot my own horn...(BEEP BEEP) but I came across this article in the New York Times toting the HOT places to go for fun in the sun and wouldn't you know it, I posted the same suggestions back in 2010!  Coqui Coqui Tulum - continues to be a place not to miss. 

I'm just saying.....

Got those 'after the holidays, back to reality, winter blues'? Here’s a Top Ten Travel List guaranteed to lift you out of the doldrums…
1. Coqui Coqui Tulum in Mexico’s Riviera Maya is a tiny, rustic-chic property smack on the most beautiful beach imaginable.   This hideaway is the brainchild of hunky Nicolas Malleville, a six-foot-two, sandy-haired Argentinean model (and landscape architect, by the way)) and his fashionable Italian girlfriend.

Coqui Coqui only has 7 rooms, but all of them have plush bedding, hand-carved stone bathtubs, antique rugs and traditional Mayan hammocks. The day you arrive, the owner’s childhood nanny prepares your bath with fresh rose petals and scented oils. The sea view spa is sweet, simple and special with 5 to 8 master therapists utilizing the natural botanicals produced in the magnificent Perfumery that Coqui Coqui owns nearby.

The hotel is run on solar energy from panels on the thatched roofs and there is no Internet access, air-conditioning (gentle cross-breezes will have to suffice)!, or electrical outlets. The energy you get will be hobnobbing with Kate Moss, Calvin Klein or Sienna Miller…
2. …and speaking of the Riviera Maya, one of the best resorts to open anywhere in a long time is Rosewood Mayakoba. This luxury hotel has everything you could possibly want in a vacation ; elegant accommodations with private plunge pools or roof-top sun decks, a dazzling white sandy beach bordering the turquoise waters of the western Caribbean, a fabulous spa centered around a natural spring-fed pool, a fully equipped gym with yoga and meditation classes, 4 restaurants serving refined Mexican and European cuisine, a wine cellar, a cigar bar, 24 hour butlers catering to your every need, a Greg Norman-designed golf course, snorkeling, diving and deep sea fishing, horseback riding and excursions to the Mayan ruins. 3. If you’re looking for that perfect ‘staycation’ (and let’s face it, who isn’t)!, consider the Rhinecliff Hotel located near historic Rhinebeck, NY.  With sweeping views of the Hudson and Catskill Mountains, this nine room boutique hotel was originally built in 1854 and the wood floors, antique beams, oak bar and fireplaces have been lovingly restored to their original grandeur.
Nearby is FDR’s Presidential Library & Museum, the Vanderbilt Mansion, the Val-Kill Cottage of Eleanor Roosevelt and the list goes on and on. If you’re a real foodie, the Culinary Institute is nearby, if you’re a collector, there’s loads of antiquing and if you’re an alcoholic , the Rhinecliff Hotel has the coolest bar this side of the Hudson!
4. With all the airline baggage allowance restrictions , every pound counts!  Globe-Trotter has designed the lightest suitcase in the world, weighing just over 2 lbs ! Dishing on dishes


For all my dear followers, I only want the best for you, so I am giving you a heads-up!  I mentioned that ‘midtown’ Miami is the place to be if you’re a foodie and a fashionista!!!

The Slow Food movement is here to stay and no one does it better than Michael Schwartz, the chef and owner at Michael's Genuine Food & Drink.

Not to ‘poach’(no pun intended), but I just had to give you this recipe reprinted from the Wall Street Journal.

Roasted Vegetables With Parsley Sauce
Total Time: 30 minutes
Serves: 4
Ingredients
1/2 pound carrots, peeled and cut into ¼-inch sticks
1/2 pound parsnips, peeled and cut into ¼-inch sticks
1/2 pound rutabaga, peeled and cut into ¼-inch sticks
1/4 cup plus 3½ tablespoons extra-virgin olive oil, plus extra as needed
1 teaspoon kosher salt, plus extra for seasoning
1/2 cup tightly packed flat-leaf parsley leaves
1½ tablespoons capers, drained and rinsed
1 anchovy fillet, drained
1½ garlic cloves
Freshly ground black pepper
3½ cups bitter salad greens, such as arugula, watercress or mizuna
3/4 cup shaved semi-firm aged goat cheese, such as drunken goat or goat gouda
2 teaspoons lemon juice

What To Do
1. Heat oven to 500 degrees. In a large mixing bowl, toss vegetables with 2 tablespoons oil and 1 teaspoon salt. Spread vegetables on a baking tray and roast them, flipping halfway through, until tender and charred in spots, about 15 minutes.
2. Meanwhile, make the sauce: In a food processor, combine parsley, capers, anchovy, garlic, ¼ cup oil and a pinch of pepper. Purée until contents are finely chopped and bright green. The sauce should be wet and slightly soupy, like a pesto. (Add extra oil to loosen the mixture if needed.)
3. Transfer roasted vegetables to large mixing bowl and toss with 2 tablespoons parsley sauce. Season to taste with salt and pepper. Reserve remaining sauce for later use.
4. Toss greens with shaved cheese. Dress with 1½ tablespoons oil, lemon juice and a pinch of salt. Pile dressed vegetables on top of or alongside salad and serve
